Well, our week started off wonderful, as last sunday Nick and I made a home cooked delicacy. We usually stick to some favorite recipes, but my grocery store hunting led to some cheap shrimp last week, so we had a treat for ourselves! I promise, if you can cook noodles, you can cook this Shrimp Scampi with no problem.
Ingredients:
1 bag of frozen, cooked shrimp (ours were tail off this time- super awesome!)
2 Tablespoons of chopped green onions
Juice from one lemon
1/4 Teaspoon of Salt (or just a rachel ray eyeball dash)
2 Cloves of garlic (I put ours in a little smusher thing, and I use about double this)
1/3 Cup Butter
1/4 Teaspoon of Hot Sauce
Then, the process is super simple.
Combine everything in a saucepan (minus hot sauce). You'll wait until the butter is all melted and bubbly, then add the shrimp, no thawing needed. Cover it and let the shrimp get hot and covered in the yummy sauce!
Don't cook it too long, just until its all hot and all (remember, the shrimp are already cooked and leaving them in too long will just make them tough). Add the hot sauce just before it's done. When it's all done, put the mixture and some extra sauce over some noodles (definately start boiling your noodle water at the same time you start the sauce, or you'll wait on noodles when the shrimp are done). This dish is perfect size for two. I know the bag of shrimp said 100, but they are quite tiny (and cute).
Your ending masterpeice will be... cue the "TA-DA"
I mean yum yum! This couldn't have been any tastier! Go try it!! (and make sure you use leftover hotdog buns and make garlic bread out of them!)
